As soon as autumn arrives, I start craving proper comfort food. Creamy sauces, cheesy casseroles, one-pan dinners and big bowls of something warm are so much more appealing than another salad when it’s cold and dark outside. And I think this is where people sometimes get low-carb meals wrong. It doesn’t have to mean tiny portions or boring chicken and vegetables every night.
There are so many healthy low carb meals for dinner that are warm, filling and actually taste like something you’d look forward to eating.
I’ve rounded up 21 of my favourite fall-friendly high protein low carb meals, including quick skillets, family-friendly casseroles, hearty chilli and plenty of one pot high protein low carb meals for those nights when you really don’t want loads of washing up.
So if you’re looking for low carb supper ideas, easy dinners, carb light meals or simply some healthy meals that actually taste good, there should be plenty here to add to your autumn meal plan.
1. Creamy Garlic Chicken & Mushroom Skillet

I love anything that combines chicken, mushrooms and a creamy garlic sauce, so this is exactly my kind of autumn dinner.
The chicken and mushrooms are cooked in one pan with a garlic, Parmesan and herb cream sauce, and the whole thing can be ready in under 30 minutes.
That’s what makes this one of my favourite kinds of one pot high protein low carb meals – loads of flavour, minimal washing up and quick enough to make on a busy weeknight.
You could serve it with vegetables or salad to keep the whole meal lower in carbs, or add rice or pasta for anyone in the family who wants it.
2. Cheesy Taco Stuffed Peppers

I love stuffed peppers because you still get a big, satisfying plate of food without needing loads of carbs to bulk it out.
And these only need six ingredients!
They’re filled with all those cheesy Mexican-inspired taco flavours, making them a really easy option when you’re craving something a bit more exciting than your usual healthy dinner.
They’re also one of those healthy easy low carb meals that you can adapt for the family – add everyone’s favourite taco toppings and let them build their own.
3. One-Pot Tuscan Chicken

This is probably one of the recipes I’d choose first from this entire list because creamy Tuscan chicken is right up my street.
You’ve got chicken with sun-dried tomatoes and spinach, all coated in a rich Parmesan cream sauce.
It feels indulgent and comforting while still fitting perfectly into a collection of high protein low carb meals.
Even better, it’s another one-pan recipe, so you can get a proper cosy dinner on the table without creating a mountain of washing up afterwards.
4. Beef & Mushroom Stroganoff

Beef stroganoff is one of those classic comfort foods that feels made for colder evenings.
This lower-carb version keeps the part we actually care about – tender beef with that rich sour cream and mustard gravy, and simply changes what you serve alongside it.
I love the idea of spooning it over buttery cauliflower mash because you still get that hearty comfort-food feeling without needing a big serving of potatoes or pasta.
Definitely one to save if you’re looking for low carb hearty meals that don’t feel remotely like diet food.
5. Cheesy Chicken Broccoli Casserole

Chicken, broccoli and loads of cheese is such a simple combination, but it just works.
I especially love recipes like this for family dinners because you’re getting plenty of protein and some veg into everyone, but all they’ll really notice is the creamy, cheesy casserole.
And it can be ready in under 30 minutes, which makes it much more realistic for a normal weeknight.
This is exactly what I mean by healthy meals that actually taste good, nobody needs to know you’ve deliberately chosen a lower-carb dinner!
6. Turkey Meatballs in Creamy Mushroom Sauce

I really like this one because it’s a slightly lighter take on the usual creamy meatball recipe without sacrificing the creamy sauce.
There’s a generous amount of mushrooms in it, and instead of relying on loads of heavy cream, the sauce combines stock, a smaller amount of light cream and a little sour cream.
That gives you plenty of flavour and creaminess without making the whole meal unnecessarily heavy.
It’s a lovely option when you want healthy low carb meals for dinner that still have that proper cosy autumn feel.
7. Garlic Butter Steak Bites & Green Beans

One-pan dinners are always going to get my vote, especially on busy family evenings.
Everything cooks together in one skillet, so you’ve got your steak and green beans sorted without needing several different pans on the go.
The garlic butter makes something incredibly simple taste so much better, and you’re getting both your protein and vegetables in the same dish.
If you’re collecting one pot high protein low carb meals for nights when you need dinner on the table quickly, definitely add this one.
8. Creamy Dijon Pork Chops

Pork chops aren’t something I always immediately think of when I’m planning meals, but this is the sort of recipe that makes me want to buy them more often.
The Dijon adds a really lovely punch of flavour to the creamy sauce and pairs so well with the pork.
It’s also made with just five main ingredients, which I always appreciate when I’m trying to get dinner sorted without buying half the supermarket.
Quick, simple and naturally lower in carbs, exactly the kind of low carb supper idea that’s actually realistic for family life.
9. Low-Carb Chicken Pot Pie Casserole

Chicken pot pie has to be one of the ultimate cold-weather meals, so I love the idea of having a lower-carb version for autumn.
You still get tender chicken and vegetables coated in that thick, creamy sauce, so it has all the comforting flavours you’d expect from a traditional chicken pot pie.
This version skips the usual flour-thickened or canned soup filling and uses broth and cream to create that lovely rich sauce instead.
It’s definitely one of the more indulgent low carb hearty meals on this list, but sometimes that’s exactly what you want on a cold evening.
10. One-Pot Cheeseburger Skillet

I love a meal that manages to taste like something completely indulgent while actually being really easy to throw together.
This basically takes all the best bits of a cheeseburger, beef, bacon, cheese, mustard and onion – and turns them into a big cheesy skillet.
By losing the bun, you’ve immediately got a much more carb light meal without having to change the flavours that make a cheeseburger so good in the first place.
It’s hearty, cheesy and filling, and I can see this being a big hit for family dinner night.
11. Creamy Cajun Chicken & Cauliflower Rice

This is such a good option when you want something creamy and comforting but also want plenty of flavour.
The chicken is cooked with tomatoes, onion and Cajun-style herbs and spices before being served over cauliflower rice to keep the overall meal lower in carbs.
I also love that it’s flexible. You can use chicken thighs or swap them for breast, and if you’re missing one of the seasonings you can easily adjust it to whatever you have in the cupboard.
That makes it one of those healthy easy low carb meals that’s actually practical for busy weeknights.
And if you’re fully in your cosy fall dinner era, I’ve also rounded up 23 healthy high protein low carb soup recipes. From creamy Tuscan chicken and cheeseburger soup to hearty beef, sausage and veggie-packed options, they’re perfect for those colder nights when only a big bowl of something warm will do.
12. Sausage, Cabbage & Bacon Skillet

This sounds so simple, but sometimes the simplest dinners end up being the best ones.
Sausage and cabbage come together in one pan to make a really savoury, hearty dinner that’s perfect when it’s cold outside.
It’s also quick enough for a weeknight and doesn’t require lots of different sides or pans.
If you’re searching for one pot high protein low carb meals that feel like proper comfort food, this is definitely one to try.
13. Chicken Bacon Ranch Casserole

Chicken, bacon and ranch, I don’t think this one needs much convincing!
They’re all flavours that work brilliantly together, and turning them into a creamy casserole makes the whole thing even better for autumn.
I particularly like recipes like this when you’re feeding other people because it doesn’t look or taste like you’ve made a special “low-carb dinner”.
It’s just a big, cheesy, satisfying family meal that happens to fit perfectly into a list of healthy low carb meals for dinner.
14. Turkey & Pumpkin Chilli

I had to include at least one pumpkin recipe in a fall dinner roundup!
We tend to associate pumpkin with sweet recipes, but I actually love using it in savoury dishes too.
This combines turkey and pumpkin in a warming slow-cooker chilli, making it exactly the kind of dinner I want waiting for me at the end of a cold day.
It’s cosy, seasonal and filling, and it’s also brilliant for batch cooking if you want meal ideas low carb enough for your goals that you can prep ahead for the week.
15. Cheesy Beef & Cauliflower Bake

This is such a good example of how simple ingredients can make a really satisfying dinner.
Ground beef and cauliflower are baked together into a hearty casserole that works for adults and kids, which is always a bonus in our house.
The beef brings plenty of protein while the cauliflower bulks everything out without needing pasta or potatoes.
I’d happily eat it exactly as it is, while you could easily add tortilla chips or another side for family members who aren’t worried about keeping their meal lower in carbs.
16. Creamy Garlic Parmesan Salmon

I wanted to include some fish in this roundup because high protein low carb meals definitely don’t have to mean endless chicken.
This salmon is topped with a creamy mixture of Parmesan, garlic and parsley before being baked until tender.
And I especially love that the recipe can be made with frozen salmon because I’m always looking for meals that don’t rely on remembering to defrost something hours in advance!
Add some roasted green vegetables on the side and you’ve got a really easy dinner that still feels a little bit special.
17. Low-Carb Cottage Pie

Cottage pie is already a staple family dinner, so I love this simple lower-carb twist on it.
You still get that rich, savoury minced beef filling underneath, but instead of the usual potato topping, it’s covered with buttery cauliflower mash.
That’s exactly the kind of substitution I prefer because you’re not trying to turn dinner into something completely different – you’re just making a small change to a meal you already enjoy.
It’s one of my favourite ideas here for low carb hearty meals, especially when the weather starts getting colder.
18. French Onion Chicken Bake

This sounds ridiculously good if you’re a fan of cheesy, savoury dinners.
It takes those rich French onion-inspired flavours and turns them into a chicken casserole that’s warm, cheesy and comforting.
It’s also ready in under an hour, so you don’t need to save it for a weekend when you’ve got loads of time to cook.
Pair it with your favourite green vegetables and you’ve got another easy addition to your list of low carb supper ideas for autumn.
19. High-Protein Broccoli Cheddar Soup

Broccoli and cheddar soup is one of those meals I immediately start craving once soup season arrives.
It’s thick, smooth and cheesy, but you still get plenty of broccoli in there too.
Even better, this version can be ready in around 30 minutes, so you don’t have to have something bubbling away on the hob all afternoon to get a really comforting bowl of soup.
This is exactly the sort of healthy meal that actually tastes good enough to make you forget you’re deliberately choosing something lower in carbs.
20. Chicken & Bacon Brussels Sprout Skillet

If you only eat Brussels sprouts at Christmas, this might convince you to start buying them a little earlier!
Chicken, bacon and Brussels sprouts are cooked with garlic and rosemary, with lemon adding a bit of freshness so the whole dish doesn’t feel too heavy.
Most of the cooking time is also hands-off in the oven, which I love because it means you can get on with something else while dinner sorts itself out.
It’s another brilliant one pot high protein low carb meal for an easy autumn weeknight.
21. Cheesy Turkey Courgette Boats

I love courgette boats because they’re one of those healthy easy low carb meals that still gives you a proper, filling dinner rather than leaving you hungry an hour later.
These are stuffed with lean turkey mince and simple Italian seasonings, so you’re getting plenty of protein alongside the extra veg from the courgettes.
They’re hearty without feeling too heavy, which makes them a great option when you want something a little lighter than the creamy casseroles and one-pot meals on this list.
They’re also perfect for meal prep, so you could make a batch ahead of time for an easy high protein low carb meal during a busy week.
And if easy, hands-off dinners are more your thing, have a look at my 19 High-Protein Crockpot Dinner Recipes too. There are everything from creamy Marry Me Chicken and slow cooker curries to shredded beef, chilli and hearty stews,– perfect for busy days when you want to throw everything in the slow cooker and let it do the hard work.
Conclusion
I think the biggest misconception about eating lower carb is that you have to give up all the meals that actually feel comforting and satisfying.
You really don’t.
Creamy chicken, cottage pie, cheesy casseroles, chilli, steak, salmon and even cheeseburger-inspired dinners can all work as carb light meals with a few simple changes.
And personally, that’s the approach I much prefer.
Rather than trying to make every meal as low calorie or low carb as physically possible, I’d rather find healthy meals that actually taste good, include a decent source of protein and keep me satisfied afterwards.
If you’re not sure where to start, pick two or three of these healthy easy low carb meals that genuinely sound good to you and add them to next week’s meal plan.
Having a few low carb hearty meals you already know you enjoy makes healthy eating so much easier than trying to reinvent dinner every single night.
And whether you’re specifically looking for one pot high protein low carb meals, low carb supper ideas, easy dinners, or simply some new meal ideas low carb enough to fit your goals, hopefully you’ve found at least a few here that you’ll want to make again and again.
